1 cup potatoes cooked, diced (½ inch)

½ cup green onions diced

½ cup red bell peppers diced

7 large eggs, beaten

½ Tbsp. olive oil

½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®

1 (15 oz.) Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
9 Steps to complete

1Preheat oven to 400°F.

2Preheat an 8 inch, non-stick ovenproof skillet over medium heat. Cook chorizo, breaking up meat with a spoon for 10 minutes.

3Add potatoes and cook for 1 minute. Add onions, peppers and olive oil. Cook for 2 minutes.

4Add egg mixture, and cook for 30 seconds without stirring.

5Afterwards, stir mixture with a rubber spatula, every 30 seconds for 3 minutes. Smooth the top of the mixture after each stir.

6Sprinkle cotija cheese over top of eggs. Place the skillet in the oven on top rack for 15 minutes, or until eggs are set.

7Remove from oven and let rest for 5 minutes.

8Flip frittata onto a cutting board and slice in 6 pieces.

9Serve and top with sour cream. Enjoy!
