    Preheat oven to 400°F.

    Preheat an 8 inch, non-stick ovenproof skillet over medium heat. Cook chorizo, breaking up meat with a spoon for 10 minutes.

    Add potatoes and cook for 1 minute. Add onions, peppers and olive oil. Cook for 2 minutes.

    Add egg mixture, and cook for 30 seconds without stirring.

    Afterwards, stir mixture with a rubber spatula, every 30 seconds for 3 minutes. Smooth the top of the mixture after each stir.

    Sprinkle cotija cheese over top of eggs. Place the skillet in the oven on top rack for 15 minutes, or until eggs are set.

    Remove from oven and let rest for 5 minutes.

    Flip frittata onto a cutting board and slice in 6 pieces.

    Serve and top with sour cream. Enjoy!
