These Chorizo Picadillo Tostadas have delicious and traditional Mexican flavors. Our recipe uses Pork Chorizo, Enchilado Cheese, and Supremo® Brand Mexican Sour Cream. Enjoy!
Ingredients

1 link from (14 oz.) pkg. Supremo® Brand Pork Chorizo from V&V SUPREMO®

¼ cup white onion, small dice

2 cloves garlic, crushed

½ lb. ground beef 80/20

¼ tsp. kosher salt
-
¼ tsp. ground black pepper
-
2 Tbsp. tomato paste
-
¼ cup red potato, peeled, medium dice
-
¼ cup carrot, peeled, small dice
-
6 (6-inch) tostada shells
-
¾ cups canned refried black beans, warmed

1 cup + 2 Tbsp. Queso Enchilado Mexican Grating Cheese from V&V SUPREMO®, crumbled

½ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 cup Romaine lettuce, thin shreds
3 Steps to complete

1Preheat a cast iron skillet for 2 minutes over medium heat; add Chorizo and cook for 3 minutes while crumbling with a spoon. Add onion, garlic, and cook for 1 minute. Add ground beef, salt, and black pepper. Cook for 3 minutes while crumbling ground beef with a spoon.

2Mix in tomato paste and cook for 30 seconds to 1 minute. Mix in potatoes and carrots. Cover, reduce heat to low, and simmer for 6 to 8 minutes or until meat has reached 165˚F. Divide Chorizo Picadillo into 6 equal portions.

3Spread each tostada shell with 2 tablespoons refried black beans. Add 1 portion Chorizo Picadillo, 2 heaping tablespoons Enchilado Cheese, and a drizzle of Sour Cream. Top with lettuce and an additional tablespoon crumbled Enchilado Cheese. Serve and enjoy!
