Our Enchilada Pizza combines authentic-style red enchilada sauce, tortillas, chicken, and delcious melted Chihuahua® Cheese from V&V Supremo®. One taste and you’ll say, Chi-Wow-Ahhhhhh!
Ingredients
-  1 Tbsp. vegetable oil
 -  ¾ lb. chicken tenderloin, diced
 -  ¼ tsp. Kosher salt
 -  ¼ tsp. ground black pepper
 -  ¼ tsp. garlic powder
 -  ¼ tsp. onion powder
 -  1 (14.1 oz.) pkg. par-baked pizza crust
 -  ½ cup red enchilada sauce...see recipe or substitute store-bought
 -  ½ cup white onion, small dice, divided
 -  2 corn tortillas, small dice
 -  ½ Tbsp. olive oil
 -  1 (7.06 oz.) pkg. Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
 -  ¼ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
 -  1 Tbsp. fresh cilantro, chopped (optional)
 
4 Steps to complete
- 1Preheat oven to 425°F.
 - 2Pre-heat a medium skillet for 1 minute over medium heat. Heat oil for 1 minute, add chicken, salt, pepper, garlic powder, onion powder, and stir until fully incorporated. Cook for 6 to 7 minutes or until chicken reaches an internal temperature of 165°F. Set aside until needed.
 - 3Evenly spread ½ cup enchilada sauce across pizza crust, leaving a 1-inch border. Evenly layer chicken, ¼ cup onion, and tortillas across crust. Top with Chihuahua® cheese and brush the border with olive oil. Bake for 8 to 10 minutes or until the cheese is melted and the crust is golden brown.
 - 4Garnish Enchilada Pizza with remaining ¼ cup onion, Sour Cream, and cilantro. Slice, serve, and enjoy!
