Traditionally picadillo is used for chiles rellenos, sopes, tacos, enchiladas and tostadas. This is our Chorizo Picadillo ideal for stuffing or main dish.
Ingredients
- 1 (14 oz.) pkg. Supremo® Brand Pork Chorizo from V&V SUPREMO®
- 1 lb. red potatoes, cooked until just tender, cut in ½ inch dice.
- ½ medium onion, diced
- ½ cup raisins
- ½ cup tomato sauce
- ½ cup slivered almonds, toasted
- ½ tsp. ground cinnamon
- 1 (14 oz.) pkg. Queso Fresco Cheese from V&V SUPREMO®, crumbled
3 Steps to complete
- 1Remove plastic casing from chorizo and place in a large sauté pan. Cook over medium heat for 10-12 minutes, breaking up meat with a spoon.
- 2Add onions, cook for 1 minute.
- 3Add cooked potatoes, raisins, tomato sauce, almonds, cinnamon and queso fresco. Mix and continue to cook for 3 to 5 minutes.
